Low calorie cosmic brownies recipe
Nostalgic treats are for everyone – even those of us in a calorie deficit. These low calorie cosmic brownies are perfectly fudgy, ultra rich, topped with a thick chocolaty frosting and finished off with a handful of fun colorful sprinkles. And the best part? These brownies are just 65 calories a pop!

Cosmic brownies are one of those desserts you can’t pass up. I LOVE anything with frosting and will happily put frosting on everything! I have a low calorie single serve cosmic brownie which is such a crowd pleaser so of course I had to make a lower calorie version of classic cosmic brownies. These low calorie cosmic brownies feature my classic low calorie fudgy brownie recipe , lathered with a thick, smooth and creamy chocolate frosting and topped with a handful of sprinkles. What more could you want?

Brownies are not only one of the most delicious desserts but they are truly so easy to make – at least my low calorie brownies are! They require a few simple ingredients and bake in under 20 minutes. Plus, they make perfect snack/dessert prep as they can be stored in the fridge for up to a week. Prepping desserts in advance eliminates decision fatigue and being tempted to snack on the easiest thing available. Plus, at just 65 calories a brownie, you can have 6 of these brownies for the same number of calories as one regular one!

Ingredients in low calorie cosmic brownies

To make these low calorie cosmic brownies you will need:
Egg – This recipe calls for one room temperature egg. To quickly get a refrigerated egg to room temperature, set it in a bowl of warm water for at least 10 minutes or on the kitchen counter for at least 30 minutes.
Stevia or 0 calorie granulated sweetener – You can use any 0 calorie granulated sweetener of your choice for these brownies. Just be mindful of the conversion as different sweeteners have different levels of sweetness. The stevia I used is a 1:2 ratio of stevia to sugar, meaning you’d need double the amount of sugar to get the same level of sweetness.
0% fat greek yogurt – For a fudgier, richer brownie, I would recommend using 0% fat greek yogurt. It is thicker than regular yogurt which is perfect for adding moisture and creating a really fudgy brownie without the addition of butter or oil.
Unsweetened almond milk – You can use any milk of your choosing but unsweetened almond milk has the lowest amount of calories.
Vanilla – Use vanilla bean paste to really elevate your brownies.
Plain/all-purpose flour – You can sub for gluten-free flour or oat flour to make these brownies gluten-free.
Unsweetened cocoa powder – A good quality cocoa powder can really take your brownies from good to great. Use a cocoa powder with minimal ingredients and no added sugar to get the best flavor profile.
Baking powder – A little to help the brownies rise.
Philadelphia lightest – To make the frosting. You can opt for low-fat cream cheese for a few extra calories if you can’t get Philadelphia lightest – equivalent to 3% fat cream cheese.
0 calorie powdered sweetener – To sweeten the frosting. You can use regular icing/powdered sugar but the calories will be a little higher.
Sprinkles – I opted for regular round sprinkles but you could use sugar-free sprinkles or colorful chocolate chips.

How to make low calorie cosmic brownies
- Pre-heat oven to 175°C (350°F). Line an 8×8 inch square cake tin with parchment paper and set aside.
- In a medium bowl, whisk together the egg and stevia until light and fluffy. Then whisk in the yogurt, milk and vanilla.
- Fold in the flour, cocoa powder, salt and baking powder until smooth and lump-free.
- Pour the batter into the prepared tin. Bake for 15 minutes, or until a toothpick inserted into the centre comes out with a few crumbs. Allow the brownies to cool.
- In the meantime, make the frosting by whisking together the yogurt, 0 calorie powdered sugar and cocoa powder in a medium bowl until smooth and lump-free. Add the cream cheese and whisk to combine.
- Spread the frosting onto the cooled brownies and top with the sprinkles.
- Slice, serve and enjoy!
Storage
These brownies can be stored in an airtight container in the fridge for up to 7 days.

- 100 g 0% fat greek yogurt *
- 100 g Philadelphia lightest*
- 50 g 0 calorie powdered sugar*
- 15 g unsweetened cocoa powder
- 10 g sprinkles
