Nostalgic treats are for everyone - even those of us in a calorie deficit. These low calorie cosmic brownies are perfectly fudgy, ultra rich, topped with a thick chocolaty frosting and finished off with a handful of fun colorful sprinkles. And the best part? These brownies are just 65 calories a pop!
Pre-heat oven to 175°C (350°F). Line a 8x8 inch square cake tin with parchment paper and set aside.
In a medium bowl, whisk together the egg and stevia until light and fluffy. Then whisk in the yogurt, milk and vanilla.
Fold in the flour, cocoa powder, salt and baking powder until smooth and lump-free.
Pour the batter into the prepared tin. Bake for 15 minutes, or until a toothpick inserted into the centre comes out with a few crumbs. Allow the brownies to cool.
In the meantime, make the frosting by whisking together the yogurt, 0 calorie powdered sugar and cocoa powder in a medium bowl until smooth and lump-free. Add the cream cheese and whisk to combine.
Spread the frosting onto the cooled brownies and top with the sprinkles.
Slice, serve and enjoy!

* Plain or All-purpose flour - This recipe calls for plain or all-purpose flour. For a gluten free alternative, you can use gluten free flour or oat flour.*Stevia or 0 calorie granulated sweetener - The stevia i use is a 1:2 ratio of stevia to sugar. You can use any 0 calorie granulated sweetener but be mindful of the conversion! This recipe would require 100g of regular sugar so if your sweetener is a 1:1 ratio, use 100g etc.*0% fat greek yogurt - Greek yogurt is much thicker than regular yogurt which results in fudgier brownies. If you're using regular yogurt, use 50g rather than 80g for the brownies and 70g for the frosting. *Unsweetened almond milk - Unsweetened almond milk is very low in calories! You can use any milk you would like for this recipe, but the calories will increase! (it will be such a small increase though so don't worry about it!!).*Philadelphia lightest - Can be subbed for low-fat cream cheese for a slight increase in calories. *0 calorie powdered sugar - You can make your own by blitzing 0 calorie sweetener in a food processor until fine and powdered. You can also opt for regular powdered sweetener for a slight increase in calories.
