This low calorie pumpkin spice latte cake is the perfect sweet treat to indulge in this fall. It is super easy to make and at just 83 calories per slice, you can eat the entire cake for less than 350 calories with no guilt and max satisfaction!

I am a fiend for a fun little autumnal drink and even more of a fiend for an autumnal dessert! Especially if that dessert is low in calories because that means you can eat so much more of it and still lose weight! Now I’m not saying this is the perfect dessert for fall but what would you call a dessert that combines everything fall encompasses for just 83 calories per slice?
If there is one thing I can not stand when it comes to dessert mash-ups is when the flavor is so subtle or barely there that it doesn’t resemble what it is supposed to at all. There is none of that here because this low calorie pumpkin spice latte cake is the literal cake version of this low calorie pumpkin spice latte. From the distinct coffee taste in the frosting to the pumpkin spice flavor in the sponge, this cake is packed with flavor to really make you feel like you’re eating your latte!

To make this low calorie pumpkin spice latte cake you will need:
Egg – This recipe calls for just 1 room temperature egg to add structure and moisture. To quickly get a refrigerated egg to room temperature, set it on the kitchen counter for at least 30 minutes.
Pumpkin puree – I used canned pumpkin puree for this recipe as it just makes things so much easier and quicker but feel free to make your own puree from a pumpkin! If you’re using canned pumpkin, make sure it is 100% real pumpkin puree (NOT pumpkin pie filling) with no added sugar.
0 calorie brown sugar – This 0 calorie brown sugar alternative is perfect for warm cozy desserts. It is very similar in taste and texture to actual brown sugar which compliments the spices so well. You can use any 0 calorie sweetener for this recipe though!
Self-raising flour – Self-raising flour is what makes this cake so moist and fluffy. If you want to use plain/all-purpose flour, make sure you add salt, baking soda and baking powder to create your own self-raising flour. Opt for gluten-free, self-raising flour for a gluten-free alternative.
Pumpkin spice – I use a homemade pumpkin spice mix made from ground cinnamon, clove, nutmeg, ginger and cardamom but any pumpkin spice mix will work for this recipe.
0% fat Greek yogurt – I recommend using 0% fat Greek yogurt to make the frosting as it is thick and will hold its shape better than regular yogurt. You can use low-fat Greek yogurt here too but the calories will be slightly higher. Opt for a dairy-free yogurt here to make this recipe dairy-free.
0 calorie powdered sugar – To make the frosting.
Instant coffee or espresso powder – A little coffee or espresso powder works great to incorporate the latte flavor. You can use espresso powder on its own or instant coffee dissolved in a little water.
How to make a low calorie pumpkin spice latte cake
- Pre-heat oven to 180ºC (356ºF). Line a 6-inch cake tin with parchment paper and set aside.
- In a medium bowl, whisk the egg until it starts to get a little foamy. Add the sweetener and pumpkin puree and whisk again until smooth and well combined.
- Add the flour and pumpkin spice mix and whisk until smooth.
- Grease the cake tin with a few 1-cal sprays. Transfer the batter to the prepared cake tin and bake for 15-18 minutes or until a toothpick inserted into the centre comes out clean.
- Allow the cake to cool on a baking rack and make the frosting by whisking together the yogurt, 0 calorie icing sugar and coffee until smooth.
- Frost the cooled cake, slice and enjoy!
Storage
Store this cake in an airtight container in the refrigerator for 3-4 days.
