Ingredients
  

Frosting:

  • 150 g 0% fat Greek yogurt
  • 30 g 0 calorie powdered sugar
  • 1 tsp instant coffee or espresso powder + ½ tsp water to dissolve instant coffee

Instructions
 

  • Pre-heat oven to 180ºC (356ºF). Line a 6-inch cake tin with parchment paper and set aside.
  • In a medium bowl, whisk the egg until it starts to get a little foamy. Add the 0 calorie brown sugar and pumpkin puree and whisk again until smooth and well combined. Add the flour and pumpkin spice mix and whisk until smooth.
  • Grease the cake tin with a few 1-cal spraysTransfer the batter to the cake tin and bake for 15-18 minutes or until a toothpick inserted into the centre comes out clean.
  • Allow the cake to cool on a baking rack and make the frosting by whisking together the yogurt, 0 calorie icing sugar and coffee until smooth.
  • Frost the cooled cake, slice and enjoy!

Notes

*0 calorie brown sugar - If you don't have 0 calorie brown sugar, you can use any other 0 calorie sweetener but be mindful of the conversion. If it is a 1:1 ratio of sweetener to sugar, use the amount specified in this recipe but if it is 1:2, 1:3 etc of sweetener to sugar, ensure you cut down the amount stated above according to the ratio of your sweetener.
