They’re particularly helpful to those on a weight loss journey or in a calorie deficit because you can satisfy a craving without going overboard. It is really quick and easy to make, requires just 7 ingredients and bakes in under 20 minutes!

This low calorie sticky toffee pudding is sweet, ultra moist and is swimming in the most delicious, light caramel sauce. So to all of you in a calorie deficit, there’s no reason to ditch your favorites to achieve all your weight loss goals.

To make this low calorie sticky toffee pudding you will need:
Dates – The dates contribute to most of the sweetness in this recipe which is great because they’re a natural sweetener. I used medjool dates but any variation should work for this recipe. The only thing that may differ between certain types of dates is the calories in them so keep that in mind.
Boiled water – A little bit of boiling water is added to soften the dates and create a paste.
Baking soda – To help soften the dates and also in the cake to help it rise to perfection.
Self-raising flour – This recipe calls for self-raising flour as opposed to plain or all-purpose flour. This is because self-raising flour contains a combination of baking soda and baking powder for the perfectly soft and fluffy sponge. You can substitute for all-purpose flour plus, 1/4 tsp baking powder, 1/8 tsp salt and 1/8 tsp baking soda here.
Full-fat yogurt – There is very little fat in this recipe as there is no egg, oil or butter. Full-fat yogurt is fairly low in calories and will add moisture to the sponge. You can opt for low-fat or even 0% fat yogurt here but the texture may be a little dry. Only a small amount is required so there’s no need to substitute it here as the calorie difference will be very minimal. Use a vegan yogurt to make this recipe vegan and dairy-free.
0 calorie brown sugar – Any 0 calorie sweetener will work for this recipe provided it is granulated. My personal favorite for this recipe is 0 calorie brown sugar as it mimics the taste of molasses which is used in traditional sticky toffee pudding recipes. A small amount will also be used to sweeten the sauce.
Unsweetened almond milk – Unsweetened almond milk is very low in calories and is perfect for baking with. You can opt for different milk if you don’t have any unsweetened almond milk but the calories will be different depending on the type of milk you use.

How to make low calorie sticky toffee pudding
- Pre-heat oven to 180°C (356°F). Line a 9cm ramekin dish with parchment paper and set aside.
- Place the dates in a small bowl, add the boiling water and baking soda. Mix well to coat the dates then mash to form a paste. Set aside.
- In a medium bowl, mix together the yogurt, 3/4 of the date paste, milk and 0 calorie brown sugar until well combined. Add the flour and baking soda and whisk to combine.
- Transfer the batter to the ramekin dish and bake for 15-20 minutes or until a toothpick inserted into the center comes out clean or with very few crumbs. Allow to cool in the ramekin for a few minutes.
- Make the sauce by mixing together the remaining date paste, yogurt and sweetener until well combined.
- Transfer the sponge to a dessert plate, top with the sauce and enjoy!

230 Calorie Sticky Toffee Pudding for One
Ingredients
For the date paste:

For the sponge:
- ¾ date paste
- 30 g full-fat yogurt*
- 15 ml unsweetened almond milk*
- 20 g 0 calorie brown sugar*
- 25 g self-raising flour*
- ¼ tsp baking soda
For the caramel sauce:
- ¼ date paste
- 30 g yogurt
- 1 tbsp 0 calorie brown sugar
Instructions

This is wonderful. I’ve always made myself sick eating too much sticky toffee pudding, and now my problem is solved. I was afraid it would be too small or the sauce would seem too yogurty, but it was perfect. I did add a few things: vanilla bean powder, ginger root and cinnamon to the sauce and toasted walnuts.
