Ingredients
  

For the date paste:

  • 30 g medjool dates
  • ¼ tsp baking soda
  • 25 ml boiling water

For the sponge:

  • ¾ date paste
  • 30 g full-fat yogurt*
  • 15 ml unsweetened almond milk*
  • 20 g 0 calorie brown sugar*
  • 25 g self-raising flour*
  • ¼ tsp baking soda

For the caramel sauce:

  • Pre-heat oven to 180°C (356°F). 
  • Place the dates in a small bowl and add the boiling water and baking soda. Mix well to coat the dates then mash until a paste forms. Set aside.
  • In a medium bowl, mix together the yogurt, 3/4 of the date paste, the milk and the 0 calorie brown sugar until well combined. Fold in the flour and baking soda and whisk again to combine. 
  • Transfer the batter to a 9cm ramekin dish and bake for 15-20 minutes or until a toothpick inserted into the center comes out clean or with very few crumbs. Allow to cool in the ramekin for a few minutes. 
  • Make the sauce by mixing together the remaining date paste, yogurt and sweetener until well combined. 
  • Transfer the sponge to a dessert plate, top with the sauce and enjoy!

Notes

*Yogurt - Full-fat yogurt is recommend for this recipe but low-fat and even 0% fat yogurt will work if that's what you have to hand. Use vegan yogurt for a vegan version. 
*Milk - I recommend using unsweetened almond milk for this recipe as it has the lowest amount of calories. Any milk will work for this recipe but the calories may differ between milks. 
*Sweetener - 0 calorie brown sugar is my favorite for this recipe but any 0 calorie granulated sweetener will work. The ratio of the sweetener I used to regular sugar is 1:1 so keep that in mind if you use a different sweetener. 
*Flour - If you don't have self-raising flour, you can use the same amount of all-purpose/plain flour and add 1/4 tsp baking powder, 1/8 tsp salt and 1/8 tsp baking soda.
