To make this low calorie funfetti mug cake you will need:
- All-purpose flour – This recipe works best with regular plain or AP flour. I have yet to try it with any other flour but if you’re looking for a gluten free alternative, gluten free all-purpose flour would work.
- Stevia – This recipe is sugar free and is sweetened with Stevia. Stevia is a naturally sourced 0 calorie sugar alternative. Any granulated sweetener will work for this recipe. You can also substitute it for regular white sugar or brown sugar but the calories will differ.
- Baking powder – Baking powder helps this mug cake rise and gives it a lovely soft, fluffy texture.
- Oil – A little oil is required to give the mug cake a soft and moist texture. Any oil will work for this recipe, I like to use olive oil.
- Unsweetened almond milk – Unsweetened almond milk is very low in calories. You can substitute for any milk of your choice but the calories will change slightly.
- Vanilla extract
- Sugar-free sprinkles – I use Good Dee’s sugar free sprinkles. You can use any sugar-free sprinkles for this recipe. They’re usually pretty low in calories with 5-10 calories per serving!
- Low fat vanilla yogurt – I like to add 1 tbsp of low fat vanilla yogurt to top this mug cake. This is totally optional though.
HOW TO MAKE THIS MUG CAKE
- In a small mug, mix the dry ingredients together using a fork.
- Add in the oil and milk and mix until well combined.
- Top with the sugar-free sprinkles and microwave for 50-75 seconds. (For reference, my microwave is 700W and it took about 65 seconds).
- Add any extra toppings you’d like and enjoy!

Can I make this in the oven?
Yes! This mug cake can be baked in the oven. Pour the batter into a oven-safe ramekin dish and bake in a pre-heated oven at 180°C (356°F) for 8-10 minutes, or until a toothpick inserted into the center comes out clean.
Can I use regular sprinkles?
If you don’t have sugar-free sprinkles, you can use regular sprinkles. The mug cake will slightly increase in calories but it won’t be by much.
