Okay so, I know that most coffee cakes don’t actually have coffee in it, but shouldn’t they? I’ve never understood why coffee cake doesn’t have coffee in it as you’d only need a small amount to get the coffee flavor anyway! The original idea was to have a cake that compliments coffee, so coffee cake is supposed to be served alongside coffee. But I don’t see the issue in combining two delicious things to make one super delicious thing! These coffee cake muffins are the perfect sweet treat for coffee lovers on a weight loss journey.
Aside from these muffins being soft, moist, ultra fluffy and DELICIOUS, my favorite thing about this recipe is how quick and easy these muffins are to make. They bake in just 15 minutes!! So, if you’re on the hunt for a delicious and low calorie snack, these muffins are it. But they’re also great for breakfast if you’re on the go!

To make these low calorie coffee cake muffins you will need:
Egg – This recipe calls for just 1 egg. The egg provides structure for these low calorie coffee cake muffins .
Stevia or granulated sweetener – Any granulated sweetener will work for this recipe. Stevia is my personal favorite and is the closest in taste to sugar.
Self-raising flour – This recipe calls for self-raising flour as apposed to all-purpose. This is because self-raising flour contains a combination of baking soda and baking powder for the perfectly risen muffins. You can substitute for all-purpose flour plus 1/2 tsp baking powder, 1/8 tsp salt and 1/8 tsp baking soda here. Opt for gluten-free flour for a gluten-free alternative.
Coffee – A small amount of brewed coffee is needed for this recipe. You can use any coffee you would like for this recipe, I opted for instant decaf coffee. You can also use powdered espresso here alongside the same volume of water in milk.
Baking powder – Baking powder helps the muffins rise.
Full-fat yogurt – This recipe contains very little fat and therefore calls for full-fat yogurt. This adds moisture to the muffins giving them that classic soft and fluffy texture. You could use low-fat yogurt in a pinch but the muffins may be a little dry. Opt for a dairy-free yogurt for a vegan alternative.
Vanilla extract – No muffin recipe is complete without a hint of vanilla!
Applesauce – A little applesauce to make the crumble topping. You can totally omit this part if you don’t like a crumbly top.
Cinnamon – A little cinnamon is needed for the crumble, again, you can leave this out!
How to make these muffins
- Pre-heat oven to 200°C (392°F).
- In a medium bowl, whisk together the egg and stevia until light and fluffy. Whisk in the coffee, yogurt and vanilla extract and mix until smooth.
- Add in the flour and baking powder and mix well to combine. Set aside.
- Make the crumble topping by mixing together the applesauce, stevia, flour and cinnamon until well combined.
- Divide the batter evenly between 6 prepared muffin cases and top with the crumble. Bake for 10-15 minutes or until a toothpick inserted into the center comes out clean.
- Serve warm and enjoy!
STORAGE
These muffins are best served warm and fresh out of the oven. Store at room temperature in an airtight container at room temperature for up to 5 days.

Ingredients
- 1 egg
- 40 g Stevia or 0 calorie granulated sweetener*
- 40 g full-fat yogurt
- 30 ml brewed coffee
- ½ tsp vanilla extract
- 70 g self-raising flour*
- ½ tsp baking powder
Crumble
- 1 tbsp all-purpose/plain flour
- 1 tsp stevia
- 1 tsp applesauce
- ½ tsp ground cinnamon
Instructions
- Pre-heat oven to 200°C (392°F).

Notes
Substitutions
- Stevia – The stevia I use is twice as sweet as sugar so I use half the amount of sugar this recipe would requires (80g). If the sweetener you use is a 1:1 ratio to sugar then you would use 80g. Adjust the amount of sweetener according to the sweetener you’re using and its ratio to sugar.
