What is cloud bread?
Cloud bread is a really light and airy ‘bread’ that is made using whipped egg whites. There are many variations of cloud bread but for this recipe, a simple recipe of egg, cream cheese and lemon juice is used.
It may seem like a difficult task to perfect cloud bread, but it is actually very simple and delicious. Cloud bread is high in protein and super low in carbs. It is perfect for those who are in a keto diet and those looking for a gluten free alternative to pizza.

To make the best low calorie cheese pizza you will need:
- Egg – This recipe calls for the whole egg with the whites and yolk separated. There are variations of cloud bread that use just the whites but for this pizza, both work best.
- Philadelphia lightest – Cream cheese is a staple in cloud bread recipes. This recipe calls for some super low calorie cream cheese for the perfect, soft and smooth texture. You can also use low fat cream cheese if you can’t find 3% fat!
- Lemon juice – Cream of tartar is typically used in cloud bread recipes. It stabilizes the eggs. Lemon juice is my favorite alternative and does the exact same thing!
- Passata – Any tomato paste will work for this recipe.
- Light/reduced fat cheese – Any cheese of your choice will work for this recipe. To keep the calories low, opt for low fat cheese. I like to use cheddar cheese for this recipe!
How to make this low calorie cheese pizza
- Pre-heat oven to 150°C (300°F).
- Separate the egg whites from the yolk and set the yolk aside. In a stand mixer or with an electric whisk, whisk the egg whites. Add in the lemon juice and continue whisking until stiff peaks form. Set aside.
- In a medium bowl, whisk together the egg yolk and cream cheese until smooth.
- Mix the egg whites into the egg yolk and cream cheese, adding the whites 1/3 at a time. Try not to over-mix as this will deflate the egg whites.
- Transfer the mixture onto a prepared baking sheet and gently spread to form a roughly 8-inch circle.
- Bake for 20-25 minutes. For a crispier base, bake for an additional 5-10 minutes. Cool for a few minutes on the baking sheet before proceeding with the pizza toppings.
- As the cloud bread cools, increase the oven temperature to 180°C (356°F).
- Add the passata, cheese and any additional toppings to the cloud bread before placing back in the oven for a further 10 minutes.
Top tips for the best low calorie pizza
Beat until super stiff – The egg whites need to be really firm in order for the cloud bread to bake. Under-beating the egg whites will lead to a flat and sloppy base so keep whisking until stiff peaks form!
Don’t over-mix – When folding the whipped egg whites into the egg yolk and cream cheese, make sure not to over-mix. This can deflate the egg whites and lead to a flat base.
Season the passata – Typically, the egg yolk and cream cheese mixture is seasoned to give the cloud bread some flavor. I prefer to season the passata instead as it packs more of a punch this way.
How to serve and store
You can make one mini pizza and enjoy it as a snack. I also like to have a few of these low calorie pizza’s for dinner. It is high in protein and fairly light.
These low calorie pizzas are best served the day they are made. However, if you want to make ahead and store, the best way to do so is by freezing. Bake the cloud bread and allow to cool. Add the toppings and freeze. You can bake the frozen pizza at 180°C for 15 minutes from frozen.

Hi Amir, you can use light/low fat cream cheese! It is only *slightly* higher in calories so that’s why I opted for lightest but its really not that big of a difference!
