To make this low calorie lotus lava cake you will need:
Self-raising flour – This recipe calls for self-raising flour as apposed to all-purpose. This is because self-raising flour contains a combination of baking soda and baking powder for a soft and fluffy sponge.
0 Calorie brown sugar – I recommend using 0 calorie brown sugar for this recipe. It is a great alternative to sugar that keeps calories low whilst making baked goods sweet!
Baking soda – To add a little extra lift and volume to this cake.
Vanilla – No cake is complete without a hint of vanilla!
Full-fat yogurt – This recipe is very low in fat and doesnt require any oil or butter so full-fat yogurt is the way to go. It will add some fat to help bind everything together as well as adding some moisture for an extra soft and moist sponge. You can use greek yogurt or regular yogurt here but my preference is greek yogurt.
Unsweetened almond milk – I always recommend unsweetened almond milk in any baking recipe I post because it is so low in calories and adds moisture like any other milk! You can opt for any milk of your choosing but the calories will be slightly higher depending on what you use.
Lotus biscoff spread – For the lotus center.
How to make a low calorie lotus lava cake
- Pre-heat oven to 180°C (356°F).
- In a medium bowl, whisk together the yogurt, milk, vanilla extract and 0 calorie brown sugar until well combined.
- Sift in the flour and baking soda and mix until well combined.
- Transfer the batter to a 9cm ramekin dish, add the lotus Biscoff spread to the center and cover over with the cake batter.
- Bake for 15-20 minutes or until a toothpick inserted into the either side of the cake comes out clean. Let the cake cool for 2-3 minutes.
- Place a small dessert plate over the ramekin and then flip, placing the cake onto the dessert plate. Serve with low calorie vanilla ice cream and enjoy!

Ingredients
- 40 g full-fat yogurt
- 20 ml unsweetened almond milk
- ¼ tsp vanilla extract
- 30 g 0 calorie brown sugar
- 30 g self-raising flour
- ¼ tsp baking soda
- 10 g lotus biscoff spread
Instructions
