In a small saucepan, whisk together the milk, sweetener, pumpkin puree, pumpkin spice mix and vanilla and place over medium heat. Continue whisking and remove from the heat once it has reached a gentle simmer and begins to steam, about 5 minutes.
Transfer the pumpkin milk mixture to your favorite mug, add the espresso/coffee, top with some pumpkin cream and enjoy!
To make this latte iced:
In a blender, mix together all of the ingredients except the ice. Blend until smooth.
Pour the latte into a glass over ice and enjoy!
Pumpkin cream:
Place the oat milk, pumpkin puree and vanilla syrup into a milk frother and set to hot foam for the hot version or cold foam for the iced version.
