150 g cooked whole-wheat penne 5 ml olive oil 50 g peeled prawns Creamy sauce 80 g tomato passata 125 ml pasta water 30 g light cream cheese Seasonings (to taste) dried vegetable stock garlic powder coriander powder dried parsley chilli flakes (optional)
Cook pasta for 1 minute less than the package instructs. Save 125ml of pasta water before draining and setting aside.
Fry the prawns in the olive oil until golden and crispy on both sides, about 3 minutes on each side.
Pour in the passata and pasta water, mix and simmer until thickened, about 3-5 minutes.
Add in the cream cheese and mix until well incorporated.
Mix in the pasta, serve immediately and enjoy!
