Peel and dice the apples. The smaller the chunks, the quicker it will cook.
In a medium saucepan, add the apple chunks, water and lemon juice and mix to combine. Place on the stove over medium heat and cover. Cook the apples for 15-20 minutes or until tender. Remove from the heat and allow to cool for a few minutes in the saucepan.
Using a potato masher, mash the applesauce until smooth and lump-free. Alternatively, you can use a blender to speed up the process.
Once the applesauce is smooth, set aside and cool completely.
Transfer the cooled applesauce to a jar with an airtight lid and refrigerate.
