Ingredients
  

  • 1 egg room temperature
  • 30 g stevia*
  • 75 g buttermilk* room temperature
  • 1 tsp vanilla
  • 1/4 tsp red food coloring*
  • 60 g self-raising flour*
  • 5 g unsweetened cocoa powder
  • 1 tsp baking powder

Instructions
 

  • Pre-heat oven to 180ºC (350ºF). Line a 6-count muffin tray with 6 cupcake liners and set aside.
  • In a medium bowl, whisk together the egg and stevia until light and fluffy. Add the buttermilk, vanilla and red food coloring and whisk to combine.
  • Add the flour, cocoa powder and baking powder and whisk to combine.
  • Divide the batter equally between the 6 cupcake liners and place in the oven.
  • Bake for 15-18 minutes or until a toothpick inserted into the centre comes out clean. Allow the cupcakes to cool completely.
  • In the meantime, make the frosting by whisking together the cream cheese, 0 calorie icing sugar and vanilla until smooth.
  • Frost the cooled cupcakes and enjoy!

Notes

*Stevia - Can be subbed for any 0 calorie granulated sweetener. The stevia I used for this recipe is a 1:2 ratio of stevia to sugar so keep that in mind. 
 *Buttermilk - Can be subbed for an equal amount of 0% fat greek yogurt. 
*Red food coloring - I used a highly pigmented gel and used around 1/8 tsp. If you're using a liquid or regular gel (not high pigment) then 1/4 should be enough to achieve the same result. 
*Self-raising flour - Can be subbed for an equal amount of plain/AP flour plus 1/2 tsp baking powder, 1/4 tsp baking soda and a pinch of salt. 
*0 calorie powdered sugar - Can be subbed for an equal amount of regular powdered/icing sugar but the calories will increase. You can also make your own by blitzing granulated sweetener in a food processor until fine and powdered.
