Pillowy soft brioche bread covered in a creamy low calorie custard and topped with fresh berries - what could be better? This low calorie french toast isn't only what breakfast dreams are made of but they're also the perfect sweet treat to end the day! This recipe is so quick and easy to make and at just 495 calories, it's really a no brainer.

Ingredients
  

  • 3 slices brioche bread
  • 1 small egg
  • 50 ml unsweetened almond milk
  • ½ tsp vanilla
  • ½ tsp ground cinnamon
  • 3 ml olive oil or oil of choice

Toppings:

  • 90 g fresh berries
  • 15 g maple syrup

Instructions
 

  • In a medium bowl, whisk together the egg, milk, vanilla and cinnamon until smooth.
  • Heat a nonstick pan over medium heat and add the oil. Dip each slice of bread in the custard, turning to coat both sides.
  • Place onto the pan and lower the heat to low. Cook each side for 2-3 minutes.
  • Serve with fresh berries and maple syrup. Enjoy!
