I would like to crown these low calorie banana bread cookies THE cookies of fall! They're just as warming, cozy, spiced and delicious as a freshly baked banana bread but with the simplicity, ease and quickness of a cookie! Plus, at just 86 calories a cookie, there is truly no better low calorie sweet treat to indulge in this autumn!
Pre-heat oven to 180ºC (350ºF). Line a baking tray with parchment paper and set aside.
In a medium bowl, whisk together the mashed banana, oil, 0 calorie brown sugar and vanilla until smooth and well combined.
Fold in the flour, cinnamon and baking soda until well combined.
Fold in the chocolate chips and divide the dough evenly between 6 cookie dough balls.
Place the cookie dough balls onto the prepared baking tray, leaving at least 2 inches of space between the cookies. Flatten them slightly using a rubber spatula.
Bake for 6-8 minutes. Allow the cookies to cool on the tray for a few minutes before transferring to a cooling rack to cool completely.
Sprinkle with some flaky sea salt and enjoy!
