Ingredients
  

  • 4 tbsp (32g) all-purpose/plain flour
  • 2 tbsp (30g) Stevia or granulated sweetener
  • tsp baking soda
  • 1 tbsp (20g) applesauce
  • 1 tsp (5ml) olive oil or oil of choice
  • ¼ tsp peppermint extract
  • ¼ tsp vanilla extract
  • 10 g chocolate chips or chunks
  • 1 crushed candy cane (optional)

Instructions
 

  • Pre-heat oven to 180°C (356°F).
  • In a medium bowl, mix together the flour, Stevia and baking soda. Fold in the applesauce, peppermint extract, vanilla extract and oil until fully combined.
  • Fold in the chocolate chips and the crushed candy cane pieces.
  • Scoop the batter in three equal balls and place onto a prepared baking tray.
  • Bake for 8 minutes. Let the cookies cool on the tray for 5 minutes before transferring to a cooling rack to cool completely.
