There's something so magical about a glazed donut - soft, pillowy and topped with a delicious glaze. Nothing beats a classic glazed donut - except a low calorie baked glazed donut! These donuts are so simple and easy to make and take you right back to childhood without taking you out of your deficit.
In a medium bowl, whisk together the egg and stevia until light and fluffy. Add the milk, yogurt and vanilla extract and mix until smooth.
Add in the flour, baking powder and baking soda and mix well to combine.
Transfer the batter to a piping bag, snip off the end and pipe the batter evenly between a 6-count silicone donut mould. Transfer to the oven and bake for 10-15 minutes or until a toothpick inserted into either side of the donut comes out clean.
Allow them to cool in the mould for a few minutes before glazing.
Make the glaze by mixing together the 0 calorie icing sugar, milk and vanilla until smooth.
Dip the donuts in the glaze and place on a cooling rack, glaze side up.
Serve immediately and enjoy!
Notes
*Stevia - The stevia I use is a 1:2 ratio of stevia to sugar. This means you need half the amount of sugar the recipe would require to sweeten it (60g). If your stevia is a 1:1 ratio, use 60g. If it is a 1:3 ratio, use 20g etc. *0 calorie icing sugar - can be subbed for regular icing sugar but the calories will be higher.
