The perfect way to enjoy a sweet cinnamon roll without all the effort, kneading and waiting around! Super quick and easy to make too which makes it a great go-to weight loss snack.

Ingredients
  

  • 1 egg
  • 35 g Stevia or 0 calorie granulated sweetener*
  • 40 g full-fat yogurt
  • 30 ml unsweetened almond milk*
  • ½ tsp vanilla extract
  • 70 g all-purpose/plain flour*
  • 1 tsp baking powder

Cinnamon swirl

  • 1 tsp ground cinnamon
  • 2 tbsp stevia
  • 1 tbsp applesauce

Cream cheese frosting

Instructions
 

  • Pre-heat oven to 200°C (390°F).
  • In a medium bowl, whisk together the egg and stevia until light and fluffy, about 5 minutes. Add in the milk, yogurt and vanilla and whisk again until fully combined.
  • Add in the flour and baking powder and mix well to combine. Set aside.
  • Make the cinnamon swirl by mixing together the applesauce, stevia and cinnamon until well combined. Transfer to a piping bag.
  • Divide the batter evenly between 6 prepared muffin cases and swirl each muffin with the cinnamon swirl. Bake for 10-15 minutes or until a toothpick inserted into the center comes out clean. 
  • As the muffins cool, make the frosting by mixing together the cream cheese and icing sugar.
  • Pipe the frosting onto the slightly cooled muffins and enjoy!

Notes

Substitutions 

  • Stevia – The stevia I use is twice as sweet as sugar so I use half the amount of sugar this recipe would requires (70g). If the sweetener you use is a 1:1 ratio to sugar then you would use 70g. Adjust the amount of sweetener according to the sweetener you’re using and its ratio to sugar. 
  • Unsweetened almond milk - I use unsweetened almond milk as it is super low in calories. You can use any milk you prefer, 2% milk is the best alternative calorie wise.
  • All-purpose / Plain flour - I used regular AP flour but you can use gluten-free or wholewheat flour if you would like.
