In a medium bowl, whisk together the 0 calorie brown sugar, applesauce, vanilla and oil until well combined. Fold in the flour, baking soda and spices and combine to form a dough.
Divide the dough into 3 equal balls and place onto a prepared baking tray. Flatten the balls slightly before placing in the oven. Bake for 8 minutes, the cookies may look underdone but they will bake as they cool so make sure you don't over-bake them.
Let the cookies cool on the tray for 5 minutes before transferring to a cooling rack to cool completely. Enjoy!
