Sometimes you just need the fulfilling comfort of a quick and classic dinner. This low calorie cheese & tomato pizza is just that - satisfying, comforting and so quick and easy to make. The entire pizza has just 394 calories and 21g of protein! Plus, this pizza can be ready in as little as 30 minutes with just 5 ingredients.
75gself-raising flour*plus an extra 5g for rolling out
70gfat-free yogurt
5ml (1 tsp)olive oil
sprinkle of salt
Pizza sauce:
50gtomato paste or puree
⅛tspvegetable stock powder
½tspdried parsley
½tspgarlic powder
30glight/reduced fat cheese
Instructions
Pre-heat oven to 200ºC. Line a baking tray with parchment paper and set aside.
Make the crust by combining the flour, salt, yogurt and olive oil. Fold until it starts to form a dough. I would recommend going in with your hands at this point to form it into a circle.
Transfer the dough to a flat surface, sprinkle with a little flour and roll out to form a 8-10 inch circle. Transfer the rolled out dough onto the baking tray lined with parchment paper. Set aside.
Make the sauce by mixing together the tomato paste and seasonings until well combined. If you prefer a thinner pizza sauce, add a little water until you reach your desired consistency.
Spread the sauce on the dough leaving a little space around the edges. Top with the shredded cheese, place in the oven and bake for 10-12 minutes.
Allow the pizza to cool for a few minutes before slicing and tucking in!

*Flour – Sub the same amount of all-purpose or plain flour with the addition of 1/2 tsp baking powder, 1/8 tsp salt and 1/8 tsp baking soda.
