Ingredients
  

  • 50 g porridge oats
  • 2 tbsp 0 calorie brown sugar alternative
  • 60 g full-fat yogurt
  • 30 ml (2 tbsp) unsweetened almond milk
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • 1 tbsp chocolate chips
  • pinch salt optional

Instructions
 

  • Pre-heat oven to 200°C (390°F).
  • Combine all of the ingredients except for the chocolate chips in a blender. Blend on high until well combined and smooth.
  • Pour the batter into an oven safe dish, top with the chocolate chips and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean or with a few tiny crumbs.
  • Allow the baked oats to cool for a few minutes before enjoying warm!

You definitely can use oat flour instead of oats for this recipe. Use an equal amount of oat flour and skip the blending. Instead, mix everything together in a medium bowl before transferring to an oven-safe dish. Bake according to the recipe.
Can I microwave this recipe?
Yes! This recipe can be made in the microwave which cuts down the baking time by a huge amount. Follow the recipe as stated but transfer the batter to a microwave safe dish and microwave on high for 1-3 minutes depending on your microwave. Do I need to use a blender?
You don't need to use a blender but the texture is much smoother and cake-like when you blend the oats. If you don't want to blend the oats, you can just mix all the ingredients together in a bowl and transfer to an oven-safe dish - bake according to the recipe.
