A lower calorie version of the classic chocolate chip pancake we all love. These pancakes are fluffy, soft and filled with chocolaty goodness in every bite!

Ingredients
  

  • 50 g plain or all-purpose flour
  • 1 tbsp stevia
  • ½ tsp baking powder
  • 1 small egg
  • 25 ml unsweetened almond milk
  • ½ tsp vanilla extract
  • 10 g sugar-free chocolate chips
  • honey or syrup to drizzle on top optional

Instructions
 

  • Sift the the flour, stevia and baking powder in a medium bowl and whisk together.
  • In a separate bowl, whisk together the milk, vanilla extract and egg until well combined. Pour the wet ingredients into the dry and whisk until smooth. Fold in the chocolate chips.

  • Pour 1/4 cup scoop of batter onto a hot, non-stick pan and cook over medium heat until golden brown. About 2-4 minutes.
  • Flip over and cook the other side for another 2-4 minutes.
  • Serve with a little honey or syrup and enjoy!
