This low calorie funfetti mug cake is the quickest and easiest way to satisfy your sweet craving. Made with a fluffy vanilla sponge, this mug cake is vegan and dairy-free too!

Equipment

  • Mug or small ramekin
  • Fork or small whisk
  • Measuring spoons

Ingredients
  

  • 3 tbsp plain/all-purpose flour*
  • 1 tbsp stevia or 0 calorie granulated sweetener
  • ¼ tsp baking powder
  • ½ tsp olive oil or oil of choice
  • ¼ tsp vanilla extract
  • 3 tbsp unsweetened almond milk* +1 tbsp for topping (optional)
  • 1 tsp sugar-free sprinkles
  • 1 tbsp low fat vanilla yogurt (optional)

Instructions
 

  • In a small mug, mix together the dry ingredients.
  • Add in the oil and milk and mix until we’ll combined.Top with the sugar-free sprinkles and microwave for 50-75 seconds. (For reference, my microwave is 700W and it took 65 seconds).
  • Allow the mug cake 1-2 minutes to cool before enjoying.

*You can use any milk of your choosing for this recipe but the calories will be slightly different.
