These low calorie coffee cake muffins are the perfect low calorie sweet treat for coffee lovers. They have all the delicious flavors of classic coffee cake but none of the faffing around with portion control!
In a medium bowl, whisk together the egg and stevia until light and fluffy. Whisk in the coffee, yogurt and vanilla extract and mix until smooth.
Add in the flour and baking powder and mix well to combine. Set aside.
Make the crumble topping by mixing together the applesauce, stevia, flour and cinnamon until well combined. Divide the batter evenly between 6 prepared muffin cases and top with the crumble.
Bake for 10-15 minutes or until a toothpick inserted into the center comes out clean. Serve warm and enjoy!

Substitutions
Stevia – The stevia I use is twice as sweet as sugar so I use half the amount of sugar this recipe would requires (80g). If the sweetener you use is a 1:1 ratio to sugar then you would use 80g. Adjust the amount of sweetener according to the sweetener you’re using and its ratio to sugar.
