Separate the egg whites from the yolk and set the yolk aside. In a stand mixer or with an electric whisk, whisk the egg whites. Add in the lemon juice and continue whisking until stiff peaks form.

 In a medium bowl, whisk together the egg yolk and cream cheese until smooth.Then fold the egg whites into the yolk mixture, adding the egg whites 1/3 at a time.
